How to Microwave a Blueberry Muffin

Things You'll Need
- 1 cup cake or all-purpose flour
- 1/2 cup wheat flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1/4 tsp. salt
- Large bowl
- Mixing spoons
- 1/3 cup honey or sugar-free honey
- 2 tbsp. vegetable or canola oil
- 1/3 cup milk
- 1 egg
- 2 tbsp. lemon juice
- Small bowl
- Whisk
- 3/4 cup blueberries, fresh or frozen
- 6 microwave-safe muffin cups

Mix all of the dry ingredients in a medium-sized bowl until well blended. Whisk the wet ingredients in a smaller bowl until the egg is thoroughly beaten and blended.

Pour the wet ingredient mixture over the dry ingredients. Mix the batter until the flour is evenly distributed and dissolved. Add the blueberries and stir gently to distribute them.

Fill six microwave-safe muffin cups halfway with batter. Place them in the microwave on high power for two to three minutes, checking them every 30 seconds after the two-minute point. Remove the muffins from the microwave once they appear set.

Set the muffin cups aside to rest for five minutes to allow carryover cooking to complete the baking process. Remove the muffins from the cups and serve warm.
