One lesser-known use for KitchenAid mixers is making fresh, homemade bread. Using the dough hook attachment that comes standard with most KitchenAid mixers, you can knead bread dough quickly and efficiently. A basic white bread recipe can be mixed and kneaded in a KitchenAid mixer, then baked into loaves, rolls, or hamburger and hot dog buns. Does this Spark an idea?

Things You'll Need

  • 1/2 cup (4 oz.) milk
  • 3 tablespoons sugar
  • 2 teaspoons salt
  • 3 tablespoons butter or margarine
  • 2 (1/4 ounce) packages active dry yeast
  • 1-1/2 cups (12 oz.) warm water (105F to 110F)
  • 5 to 6 cups (1 lb. 13 oz.) unbleached bread flour

  1. Mix and Knead White Bread in Your KitchenAid Mixer

      In a small saucepan, stir together milk, sugar, salt and butter, heating over low heat until the butter melts and the sugar dissolves. Cool the mixture until it is lukewarm. While the milk mixture is cooling, dissolve active dry yeast in warm water and let stand for 10 minutes.

      In the KitchenAid bowl, add the lukewarm milk mixture and the warm water to 4 1/2 cups (1 lb. 6 oz.) flour. Attach the bowl and dough hook to the KitchenAid mixer. Turn to speed setting 2 and mix for one minute.

      With the mixer on speed 2, add the flour slowly and mix until the dough sticks to the hook and the side of the bowl is clean. Knead the dough on speed 2 for two more minutes, or until dough is smooth and elastic. The dough will be slightly sticky to the touch.

      Move the dough into a greased bowl and cover the bowl with a clean kitchen towel. Let the dough rise in a warm place until it has doubled in size, about one hour.

      Punch the dough down and divide it in half. Shape each half into a loaf and place in a greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. Cover with a clean kitchen towel and let rise in warm place until doubled in bulk, about one hour.

      Bake at 400 degrees F for 30 minutes. Remove from pans immediately and cool on wire racks.

Tips & Warnings

  • For hamburger buns, divide the dough into 2 1/2 oz portions and roll each portion into a ball. Flatten the balls into discs and place on a cookie sheet dusted with cornmeal or flour. For hot dog buns, shape into 5 to 6 inch long tubes with seams down. Brush with whipped egg whites and water mixture and bake at 400 F for 12 to 14 minutes or until golden brown.
