Potatoes are high in potassium but you can lower the amount.

Potassium is an important mineral because it keeps the heart beating and controls nerve and muscle function in the body. It also helps maintain fluid as well as keep electrolytes and pH levels balanced. However, levels of potassium that may be too low or too high can be dangerous, especially if you have bad kidneys. Potatoes, among others, are a high potassium food. There are a few ways to lower their potassium content, if you need to do so. Does this Spark an idea?

Instructions

      Pour water into a large pot and set to boil. Make sure there is about 10 times the amount of water than potatoes. They should have lots of room to cook.

      Cut fresh potatoes into small pieces, slice them thin or grate them. Place in boiling water and let cook for 10 minutes.

      Drain the potatoes once they are done. This process will reduce half the amount of potassium, leaving 100 to 200 mg for each 1/2 cup serving.

Tips & Warnings

  • You can also let them soak in warm water at room temperature water for two hours before you boil them. If you do this, the boil time should only be five minutes.
