Replace white or brown sugar with Sucanat.

Sucanat is a brand name of sugar made from cutting and juicing the whole sugar cane. This juice is crystallized into dark-brown sugar granules called Sucanat. The presence of molasses from the sugar cane gives Sucanat a darker color and richer flavor than white sugar. It is similar to brown sugar in taste and its effect on recipes.       Subtract the white sugar and brown sugar from your recipe.

      Replace each of these with an equal amount of Sucanat. For instance, if your recipe requires 1 cup of white sugar and 1 cup of brown sugar, use 2 cups of Sucanat.

      Prepare and bake the recipe as directed. The cooking time and temperature will remain the same. If you replaced mostly white sugar with Sucanat, your baked goods will be more moist than the original recipe. However, if you replaced mostly brown sugar, your baked goods will be slightly drier than the original recipe.
