Russian tea cookie are also known as Mexican wedding cakes or Russian tea cakes. They are a delicious cookie that can be made and enjoyed year-round. They stay fresh without freezing for up to two weeks, but can also be frozen so that they may be pulled out of the freezer and enjoyed any time.   • Freezer-safe plastic storage container
  • Wax paper

      Cool cookies completely after baking.

      Place the cookies in a freezer-safe plastic storage container, making one layer of cookies.

      Place wax paper over the cookies in the container and then place another layer of cookies on top of the wax paper. Continue doing this until the container is full. Since Russian tea cookies are fragile cookies, always use wax paper between the layers.

      Close the container and write the date on it. The date will allow you to tell how long the cookies have been in your freezer and will ensure that you eat them within six months of freezing.

Tips & Warnings

  • Do not freeze your Russian tea cookies if you frost them. Defrost them completely before adding frosting.
