Things You'll Need

  • 1 or 2 boneless skinless chicken breasts

  • 1 egg

  • 2 tbsp. water

  • 1 cup Italian seasoned breadcrumbs

  • 1/2 package shredded mozzarella cheese

  • 1 jar spaghetti sauce

Don't let the size fool you; toaster ovens have the ability to bake, broil and roast and are perfect for small kitchens or single cooking. Preparing a chicken breast in a toaster oven helps keep the cooking area cool in warm weather and works well when there is limited space, while using less energy. Cooking a chicken breast in your toaster oven is not difficult, and the resulting meal is tender and flavorful.

Step 2

Rinse chicken breasts in cool water and dry with paper towels. Season with a small amount of salt and pepper, if desired.

Step 3

Beat an egg and 2 tbsp. water until mixed and dip the chicken breasts in the egg mixture to coat completely. Roll the egg-coated chicken in breadcrumbs until covered.

Step 4

Place the breaded chicken breasts on the tray from the toaster oven and put the tray into the preheated oven. Set the timer for 30 minutes. When the timer goes off, check the chicken for doneness. Chicken is cooked when it reaches 165 F on a meat thermometer or when it's no longer pink on the inside.

Step 5

Remove the chicken breasts from the toaster oven and sprinkle with shredded mozzarella cheese, which will melt on the still hot chicken breasts. Serve on a plate with warmed spaghetti sauce.

Warning

If any food pieces ignite, which is a common cause of toaster oven fires, pull the plug and don't open the door until the flame is gone.
