      Clean the probe part of your probe thermometer with hot, soapy water. Make sure not to skip this step even if this is the first time you have used the thermometer.

      Insert the end of the probe into the meat. Try to get it as close to the center of the thickest part of the summer sausage. Make sure not poke through the bottom of the sausage so that you get an accurate temperature of the sausage itself and not what it is cooking on.

      Check the temperature by looking at the display of the probe thermometer. Once the probe gives you a reading, you have successfully measured the internal temperature of the summer sausage. Make sure to clean the thermometer again after use to avoid cross-contamination with any other foods you may need to measure in the future.
