  • Round 9- or 12-inch cake
  • Cake turntable
  • White buttercream icing
  • Corn syrup
  • Mixing bowl
  • Spoon
  • Cake spatula
  • Disposable pastry bag
  • Small rounded icing tip
  • Large rounded icing tip
  • Pastry coupler and ring
  • Chocolate royal icing
  • White fondant
  • Red food coloring
  • Cornstarch
  • Rolling pin
  • Craft knife or mini flower shaped cookie cutter
  • Wide spatula
  • Kitchen knife
  • Yellow or gold food coloring

Instructions

  1. Cherry Blossom Cake

    • 1

      Place a cake on a turntable. Make white or light-colored buttercream icing easy to spread by adding several tablespoons of corn syrup into a mixing bowl with the icing. Mix together thoroughly.

      Put a large amount of thinned icing on the top part of the cake. Spread out the icing evenly over the top using a cake spatula. The icing should extend to the edges.

      Use the turntable to ice the sides of the cake. Place smaller quantities of icing along the sides of the cake and smooth with the spatula. Repeat until the cake is completely covered with frosting.

      Fit a disposable pastry bag with a plastic coupler base inside of the bag and screw a rounded tip with the coupler ring over top. Fold down the top of the bag, exposing the bottom half. Fill about 1/2 cup of icing into the bag. Unfold the top, twist and hold the bag firmly in one hand.

      Begin at the base of the cake and pipe branch shapes extending from the sides over the top of the cake. Use a thicker, wide tip to create the base of the branches and a smaller round tip for thinner branches coming from the base. Leave space between the branches to decorate with fondant flowers.

      Dust a flat work surface with cornstarch. Roll out thin sheets of each ball of fondant with a rolling pin. Cut out small flower shapes with a craft knife or miniature cookie cutter in the shape of cherry blossoms. Create different size flowers.

      Attach the flowers to the cake with a small dab of royal icing. Layer a larger flower fondant shape under a smaller flower in a contrasting color. Leave room at the top of the cake for a birthday message

      Pipe a birthday message on the top of the cake using chocolate icing. Transfer the cake from the turntable to a cake plate with a wide spatula.

    Fortune Cookie Cake

      Place a cake with a domed, untrimmed top on a turntable. Put a large quantity of white buttercream icing in a mixing bowl.

      Put several drops of gold or dark yellow food coloring in the bowl with the icing. Mix together thoroughly.

      Cut a triangular shaped wedge out of the cake, which will leave the cake in a rough approximation of the shape of a fortune cookie. Discard the triangle cake piece.

      Add a large quantity of icing to the top of the cake and frost evenly. Add several tablespoons of corn syrup to thin the frosting. Ice the sides and the inside wedge of the triangle shape of the cake.

      Print or draw out a large birthday message on a rectangular piece of paper. Attach it to the base of the cake with small dabs of frosting. This should resemble the fortune of a fortune cookie, though on a larger scale.

  • Pipe out Asian characters in Chinese or Korean on the cake to enhance the Asian theme.

  • Add corn syrup in small quantities to achieve the right frosting consistency.
