How to Freeze Chocolate Dipped Strawberries
You may crave chocolate-covered strawberries every day, but if you try to freeze them for more than 20 minutes, you could end up with chocolate-covered mush. It's easy to love chocolate-covered strawberries -- they're easy to make and sinfully delicious without adding tons of weight to your hips. The hardened chocolate shell might conceal the delicate nature of the strawberry beneath, but make no mistake, strawberries are delicate. Lay the wax paper inside the cookie tray. Place your freshly dipped chocolate-covered strawberries in rows along the wax paper until the tray is full. The wax paper prevents the chocolate from sticking to the pan after cooling.

Insert the entire uncovered tray of chocolate-covered strawberries into the freezer for three to five minutes immediately before serving. Cold air sets the chocolate coating quickly, creating a hard shell around the strawberry. Using your freezer instead of your refrigerator reduces the chocolate's set time by approximately 10 minutes. Avoid leaving the strawberries in the freezer for more than 20 minutes, or they will become soupy and mushy, like the thawed strawberries you use on waffles.

Remove your chocolate-covered strawberries from the freezer. Gently peel them off the wax paper, arrange on a platter and serve. Don't wait more than a few minutes after removing them from the freezer before serving, or the chocolate shell will develop condensation droplets.
