Instructions

    • 1

Fill a sink with cool water and immerse the bottom and lid of the terracotta pot under the water. Allow the parts of the pot to soak for 10 minutes.

    • 2

Place the foods you wish to roast into the terracotta pot. You can roast meats or poultry along with potatoes and vegetables all together in the pot.

    • 3

Season the foods with salt, pepper and herbs, according to your desires.

    • 4

Cover the pot and place it into a cold oven. Set the oven to the temperature necessary to roast the food -- up to 450 degrees Fahrenheit.

    • 5

Roast the foods in the pot for the time recommended in the recipe. Remove the pot and place it onto a hot pad to cool. If you place the hot pot on a cool surface, the pot could crack.

    • 6

Serve the food right in the clay pot for an attractive serving dish.

    • 7

Wash the clay pot by hand after it cools. Fill the sink with warm water and add 1/4-cup baking soda. Soak the pot for about 30 minutes and then brush it lightly with a dish brush to clean it. Rinse the pot well with plain water.

Tips & Warnings

  • Foods may continue to roast after you remove them from the oven. Remove the lid to stop cooking time after you remove the pot from the oven.

  • Do not add more than a tablespoon or two of liquid to the terracotta pot to roast. Because of the excessively moist roasting environment, if you add much liquid, the pot could overflow.

  • Do not use the terracotta pot on the stove top.

  • Do not use soaps or abrasive cleaners to wash a terracotta pot.
