How to Roast Garlic in a Pressure Cooker
Roasting garlic softens its flavor and reveals a nuttiness that you do not normally find. It can be used as a spread with a French baguette or served with roasted meats. It also can be added to salad dressings, mayonnaise, butter, cream cheese or olive oil to create mellow, garlic-flavored dips and spreads. Things You'll Need
- 6 heads of garlic
- Sharp knife
- Aluminum foil
- 1/4 cup olive oil
- 1 cup water

Chop the tops off the heads of garlic. This will leave the cloves exposed but the heads intact.

Put the heads of garlic on a large sheet of aluminum foil. Drizzle the heads with 1/4 cup olive oil and mix with your hands until the heads are covered in oil.

Wrap the heads in the aluminum foil, creating a packet.

Place the packet into the pressure cooker. Add 1 cup of water to the bottom of the pressure cooker.

Turn on the burner, and allow the pressure in the pressure cooker to reach 10 lb. Cook the cloves for 10 minutes.

Allow the pressure cooker to cool before opening; then remove the foil packet. The heads of garlic are now filled with roasted cloves for your use.
