Use a fat separator for the best gravy.

A fat separator is a handy device that separates the meat fat from the pan juices. It looks like a miniature water pitcher, except the spout is attached to the bottom of the pitcher, not the top. Separators can be made of plastic, metal or ceramic, but they all look similar and work exactly the same way. Once the fat has been separated, the juices can be used to make nearly fat-free gravy. Instructions

    • 1

      Pour all pan drippings from a roast or other cooked meat into a fat separator. Allow drippings to settle until the fat rises to the top.

      Pour the juices into a bowl only enough to remove the fat that has risen and accumulated in the spout.

      Continue pouring the juices into the other bowl until you reach the line of fat at the top of the separator. Stop pouring before the fat runs out of the spout and into the juices.

      Use the juices in the second bowl to make gravy, or use them "as is" for a topping sauce, Au jus.
