Make corned beef hash from a combination of lean meat, meat fat and potatoes. Contrary to the name of the dish, corn is not part of it. Rather, the term corn comes from the curing method. To heighten the taste of the corned beef, it can be topped with a brown sauce, made from brown stock. Brown stock can be purchased pre-made, or can be made from beef stock or soup.   • 2 tbsp butter
  • 2 tbsp flour
  • 1/4 tsp salt
  • 1/5 tsp pepper
  • 1 cup brown stock
  • 1 slice onion
  • Frying pan
  • Strainer

Instructions

      Melt butter over medium heat in frying pan.

      Cook onion in butter until it becomes slightly brown.

      Add the flour, salt and pepper to pan and cook until the color darkens further.

      Pour the brown stock into the pan slowly and stir into the mixture. Let the stock boil for one minute.

      Strain the sauce through a strainer before serving over the corned beef hash.
