Splitting your own chicken breasts is more economical than buying boneless, skinless breasts.

Boneless, skinless chicken breasts cost a lot more per pound than chicken with bones in do. Rather than spend the extra money, it is much more economical to buy whole chickens and cut them up yourself and freeze them. Some people are a little intimidated by having to cut their chicken into pieces. However, with a good, sharp knife you can cut your own chickens and split the breasts with ribs on your own.   • Sink
  • Cutting board
  • Sharp kitchen knife
  • Whole chicken

Instructions

      Remove the chicken from its packaging and rinse it very well under the kitchen sink.

      Set the chicken down breast side up on the cutting board.

      Remove the leg quarters first. Do this by bending the leg and thigh down until it pops out of socket. Then cut behind the joint where the thigh connects to the body. Cut the wings off in the same fashion.

      Set the chicken on its rear haunches. Place one hand on the upper breast cavity and hold it back. Cut across both sides under the breast through the fleshy portion of the chicken that holds the top half and bottom half together. This will remove the bottom portion of the chicken and its back.

      Place the remainder of the chicken, which at this point will only be the whole breast, down on the cutting board with the breast down. Cut straight down the middle of the breast. This will split the breast in half.
