How to Cook a Chicken on a Rotisserie Barbecue
Cooking chicken on a rotisserie imparts a wonderful barbecue flavor. Rotisserie chicken can be healthier as well because the fat drains off while it's cooking. Typically, rotisserie chicken is cooked over an electric grill. Many recipes call for frequent basting while the chicken is cooking, so have a basting brush on hand. Does this Spark an idea?

- Basting brush
- Seasoning

Season the inside and outside of the chicken. Salt, pepper and lemon pepper go well with rotisserie chicken. A 3-lb. chicken is the perfect size for cooking on a rotisserie. If you wish, you can stuff the inside of the chicken with herbs such as thyme and rosemary.

Truss the chicken. Using kitchen string, truss the chicken by tucking the wings beneath it and tying the legs together. Trussing helps chicken retain its shape.

Melt butter over medium heat. For a 3-lb. chicken, you'll need a 1/4 cup of melted butter. Once the butter is melted, transfer it to a bowl. You can also add spices and seasoning to the melted butter.

Place the trussed and seasoned chicken on the rotisserie. Cook the chicken over high heat for 10 minutes without covering it. After 10 minutes, lower the heat to medium and lower the lid.

Baste the chicken. Dip your basting brush in the melted butter and baste the chicken every 30 minutes. The chicken will need to cook until a meat thermometer reads 180 F when inserted into a thigh. This should take roughly 90 minutes. When done, take the chicken off the rotisserie and allow it stand for 10 to 15 minutes before serving.
