How to Store Egg Meringue Shells

Meringue shells can serve as delicate bowls to hold a wide range of dessert items. These small, nest-shaped cookies, which are made of stiffly beaten egg whites and sugar, bake at a fairly low temperature for up to two hours before sitting overnight in the warm oven to finish drying. You can then fill them with your choice of ingredients such as ice cream, pudding, fresh berries or fruit salad. Store the meringue shells properly to keep them light, crisp and crunchy.       Place your freshly made meringue shells into an airtight container. You may stack them gently, but do not stuff or pack them tightly into the container. They are very fragile and will break if you force them together too roughly. Seal the container.

      Keep the sealed airtight container of meringue shells at room temperature if you will use them within approximately 24 hours.

      Freeze the airtight container of meringues if you will not use them within 24 hours. You can keep them for up to two weeks in the freezer.

Tips & Warnings

  • Do not allow your meringue shells to get wet or even damp. Moisture will interfere with their delicate texture, causing them to disintegrate.
