How to Sear Tuna Steak on a Grill
When grilling tuna, the most important thing is to choose the freshest tuna possible. If it is more than a couple of days old, don't buy it. Go to a fishmonger that has a quick turnover and a consistent supply. Purchase sushi grade tuna for searing on the grill: Even though you will be cooking it lightly, this tuna is the best and safest to eat. The most common variety used for grilling is yellowfin. Purchase tuna steaks that are at least 1 1/2 inches thick so you can sear them but leave the inside rare. Thinner steaks will cook to medium while the outside is seared.

Drizzle the tuna steaks with a 3 tbsp. of olive oil and place in a resealable plastic bag in the refrigerator for one hour. If you prefer, marinate the tuna by adding lemon or lime juice and a few herbs to the olive oil. For a Thai marinade, add coconut milk, cilantro and chili powder. For a Japanese marinade, add wine vinegar, soy sauce, ginger and sugar.

Preheat the grill to medium-high heat for 10 minutes. A high temperature will help sear the tuna properly on the outside. Oil the grill and clean it with a grill brush to help prevent the tuna from sticking.

Remove the tuna from the refrigerator. Sprinkle the tuna with salt and pepper if you have not marinated it.

Sear the tuna on the grill for about 2 minutes per side for rare, or 3 minutes per side for medium-rare. Serve immediately.
