Yeast is a living organism used in baking as a leavening agent. Active dry yeast can be purchased in small foil-lined packets or in larger jars. A packet of yeast is typically used in its entirety in a recipe, but once a jar of yeast is opened, the remaining yeast needs to be preserved. The jarred yeast organisms exist in a state of dormancy, but heat, light and moisture will reactivate the yeast, deteriorating its quality and usefulness in baking. Does this Spark an idea?

      Store yeast in a cool place. The refrigerator or freezer works well to help preserve the shelf life.

      Keep yeast away from the light. You might keep it in a cupboard if you plan on using it quickly, but inside the freezer provides both a dark and cool storage space.

      Keep yeast away from moisture. Replace the lid on the jar as soon as you've finished with it to make sure the yeast stays as dry as possible. This will prevent it from activating and keep it useful for the longest possible period of time.
