One of the best things about a turkey dinner is the leftover turkey, which can be eaten either heated or cold, incorporated into a variety of flavorful hot or cold sandwiches or added to casseroles, soups and stews. To keep the meat moist and to prevent bacteria that can contribute to foodborne illness, leftover turkey must be stored quickly.       Cover your turkey loosely with tin foil to retain the moisture until you're ready to store your turkey. Never allow turkey to sit on the counter for more than 2 hours, as allowing the turkey to remain unrefrigerated for too long will dry out the meat and possibly create conditions that can produce dangerous bacteria.

      Divide your leftover turkey into small portions. Place each portion into a small, airtight container, as small portions will chill faster and airtight containers will prevent exposure to air that can cause the meat to become dry.

      Place the container of leftover turkey in the refrigerator immediately and use the turkey within 3 to 4 days.

      Freeze your leftover turkey if you can't use the turkey within 3 to 4 days, as freezing the meat will keep it safe and moist. Wrap the small portions securely in aluminum foil to keep the meat moist and to prevent freezer burn that can cause the meat to be tough and dry. Date the package and use the turkey within 4 to 6 months. Turkey frozen longer than 6 months will be safe to eat, but may be dry and tasteless.

      Eat your leftover turkey cold, or reheat the turkey on top of the stove, in the oven or in the microwave oven. Use a meat thermometer and heat leftover turkey to a temperature of 165 degrees F. Cover leftover turkey with a small amount of water or broth to keep the turkey moist. If you reheat the turkey in the oven, turn the oven temperature to at least 325 degrees F.

Tips & Warnings

  • Remove stuffing from your turkey as soon as the turkey is removed from the oven. Store stuffing and gravy separate from the turkey, and use refrigerated stuffing and gravy within one to two days.

  • Stuffing and gravy can be frozen but should be used within a month to remain moist.
