How to Store Sugar Paste
Sugar paste, also known as gum paste, is an edible substance that you can form into nearly any shape you wish. You can also color it in almost any hue you can imagine, so it works well for creating lifelike, vividly colored forms to put onto cakes and other desserts. If you have ever seen realistic-looking edible sugar flowers or fruits on a fancy cake, chances are they were made from sugar paste. Wrap each piece of sugar paste in a secure, airtight layer of plastic wrap. This technique helps keep the sugar paste away from the air, which causes the paste to dry out and become hard and unusable.

Place the wrapped sugar paste into a resealable plastic bag. You can put more than one wrapped piece of sugar paste into a bag as long as all the pieces fit comfortably and give the bag room to close. Seal the bag tightly to give the sugar paste an extra layer of protection from dry air.

Refrigerate the sealed bag of wrapped sugar paste pieces. You can keep the sugar paste here for up to six months.

Remove the sugar paste from the refrigerator about 30 minutes before you wish to use it. Allow the sugar paste to warm to room temperature before you try to work with it.

Tips & Warnings
If your sugar paste is somewhat hard when you remove it from the refrigerator, add a small amount of fresh, wetter sugar paste. Knead the two pastes together to restore and revive the older, drier paste.
