How to Dry Marcato Pasta
Marcato is an Italian brand pasta maker that is used to make all varieties of pasta and pasta dough. Once the ingredients for the pasta dough have been combined, kneaded and rolled through the machine, cutting and drying the pasta is the easy part. Fresh pasta can be dried and saved for one to two weeks without any difficulty, but it still retains more moisture than the dried pasta that you purchase at the store. - Marcato pasta machine
- Pasta dough
- Extra flour
- Rack for drying (optional)

Roll the pasta through the Marcato pasta machine, being careful not to tear the pieces that come out. Lay on a flat, floured surface and cut the pasta to the length that you prefer.

Sprinkle the cut pasta with a tablespoon of flour to ensure that it will not stick together.

Lay pasta on a drying rack or on a flat, floured surface to dry. The pasta will need at least one hour to dry before being used, and longer before being stored.

Leave the pasta on the rack or flat surface until it feels completely dry to the touch. This could be anywhere from two hours to one full day, depending on the thickness of the pasta. Store in a sealed plastic container in a cool, dark place for one to two weeks. If any mold appears, the pasta has gone bad and must be thrown out.

Wrap thin strands of pasta, such as fettuccine or spaghetti, into a nest before drying for easier storage. Make sure that they are well floured and rotated often during the drying process so that they do not become moldy.
