Things You'll Need

  • 1 2/3 cups flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 3 1/2 ripe bananas
  • 2 tbsp. sour cream
  • 1 tsp. vanilla
  • 2/3 cup walnuts (optional)
  • 9-by-5 inch loaf pan
  • Cooking spray
  • Mixing bowls

      Preheat the oven to 325 degrees F.

      Spray a 9-by-5 inch loaf pan with non-stick cooking spray.

      Beat the sugar and eggs in a large bowl with a whisk or fork until their consistency is light and fluffy.

      Sift together the flour, salt and baking soda in a bowl.

      Mash the bananas with a fork or potato masher.

      Add the mashed bananas, oil, sour cream and vanilla to the the sugar and egg mixture and mix well.

Tips & Warnings

  • If you like nuts in your bread, add 1/2 cup of chopped walnuts or pecans to the mixture when the dry ingredients are added. Cut down on the fat by substituting 1/4 cup of applesauce for the 1/2 cup of oil.
