How to Change Plain Flour to Cake Flour
While you can make cakes with regular flour, using cake flour instead gives the final product a lighter, more sponge-like texture. This is due to the lower protein content of cake flour. It contains only 6% to 8% gluten as opposed to regular flour's 10% to 12% gluten. If your grocery store does not carry cake flour, or if you only make cakes occasionally, you can make the cake flour yourself. Add this to my Recipe Box.
Things You'll Need
- 7/8 cup all-purpose white flour
- 2 tbsp. corn starch
- Bowl
- Fork
- Flour sifter

Put the flour and cornstarch into a bowl. Mix well with a fork to blend.

Pour the flour and cornstarch mixture into a flour sifter. Sift the mixture. This will help blend the two ingredients together thoroughly.

Use the mixture as if it were cake flour. You do not need to make any other modifications or substitutions.

Tips & Warnings
This will make one cup of cake flour. If you want to make more or less, scale the all-purpose flour and corn starch accordingly.
