How to Store Candied Fruit

Candied fruit is a common ingredient in some desserts, perhaps most notably in fruit cakes. Thanks to the sugar, which preserves the fruit, your candied fruit will not go bad anytime soon. This does not mean you can be careless in your storage habits, however; improper storage can cause changes in texture and flavor. With proper care, you can keep your candied fruit for a year or more. Even with proper care, however, the flavor may begin to change after a year or so. Does this Spark an idea?

      Put the candied fruit into an airtight container. Close the container securely. This will keep out air and moisture, which will help preserve the flavor and texture of your candied fruit.

      Store the sealed container of candied fruit in a dark, dry place that stays fairly cool. Depending on where you live, options may include a cupboard in your kitchen, your cellar or your basement. If you will use the fruit within a year, there is no need to refrigerate it. Put the container into the refrigerator if you will not use its contents within a year, however.

      Use the candied fruit within two years. If the fruit became hard during storage, soften it by soaking it in basic simple syrup. Combine equal parts of sugar and water in a saucepan and warm over medium-high heat until the mixture boils. Reduce the heat and begin stirring the mixture, then remove it from the heat entirely when all of the sugar dissolves. Allow to cool, then soak the fruit in this mixture overnight to help soften it.
