Stilton, a cheese whose history dates back to the early 18th century, is also the name of the English town where it was first sold. There are now just six dairies in the world licensed to produced Stilton (a trademarked name). This pungent and flavorful cheese is often paired with sweet wines, salads and fruit.       Remove the Stilton from the refrigerator up to two hours before serving so that it reaches room temperature.

      Place Stilton on a small wooden cutting board with a cheese knife. Serve a mild flavored bread, such as baguette beside it. Place a bowl of grapes or sliced plums and some nuts near the cheese and pour either a full-bodied red wine or a sweet dessert wine.

      Freeze leftovers by wrapping portions in plastic wrap. They will keep for up to three months. Defrost overnight before serving again.
