There are, by my count, at least seven levels of fried chicken. The worst of them is good; the best, which I waited forty-four years to find, led to what can only be called an out-of-body experience. Let’s start at …
How to Make Fruit Skewers
Fruit skewers can be an attractive way to serve fruit, either at a sit-down meal or at a buffet table. Skewers can be simple, involving several pieces of chilled fruit or more elaborate, where the fruit is actually grilled before serving. Choose fruit that is fresh and firm but tender, so the skewer can poke it easily. Skewer recipes may be varied depending on the fruit available and your tastes. Add this to my Recipe Box.

Raw Fruit Skewers
-
1
Cut the watermelon, cantaloupe, honeydew melon and pineapple into cubed, bite-sized pieces. Cut the strawberries in half, lengthwise from stem to bottom. Place each fruit in the fridge to stay fresh while you continue cutting.
-
2
Thread each piece of fruit onto skewers, alternating fruit type. Leave at least 1 inch of exposed skewer at the top and bottom of each serving, so the skewer can be easily held and won't fall off during a meal.

3
Arrange the skewers on a serving plate. You can stack them lengthwise or along the edges of a round plate in a circular pattern. A fresh yogurt dip with a serving spoon is a nice touch for the center of a round plate.

4
Prepare six skewers to be threaded with fruit. Soak bamboo skewers in water for 30 minutes while you cut your fruit. Wash and rinse metal skewers.
-
5
Cut the nectarines, plums and apricots in half and remove the pits. Thread the fruit onto the skewers alternating fruit type. Line up the cut side of each fruit so it will lay flat on the grill. Sprinkle the sugar on the cut sides of the fruit. Let the sugared fruit stand for 10 minutes.
-
6
Prepare the grill while your fruit is standing. Spray the grill rack with a non-stick spray and turn it to medium-high heat.
-
7
Place the skewers on the grill cut-side down. Cook for about five minutes until the fruit is heated through and the sugar caramelized.
