  • 12 small red-skinned potatoes
  • Salt
  • 1 stick butter
  • 1 1/2 tsp. Chinese chili sauce
  • 2 teaspoons fresh minced garlic
  • 3 tsp. fresh minced chives
  • 2 saucepans

Instructions

      Select your potato. Asian butter sauce goes on a variety of potatoes. From sweet potato to red-skinned potatoes, you may have a very sensitive palette, or you may want to try something different. For this recipe, prepare red-skinned potatoes.

      Cut raw red-skined potatoes into quarters, then place into saucepan. Cover with water and add a bit of salt. Bring the water to a boil and cook until tender, 10 to 15 minutes.

      Melt 1 stick butter, 1 1/2 tsp. Chinese chili sauce, 2 tsp. fresh minced garlic and 3 tsp. fresh minced chives in a separate saucepan.

      Drain boiled red-potatoes and return to the same saucepan. Add half the Asian butter sauce from the other saucepan with salt and pepper. Bring to a simmer and then shake the saucepan over heat to blend ingredients.

      Cook for one minute. Then serve your Asian butter potatoes. This amount serves four people. Use the rest of the Asian butter sauce to add to other favorites or save for a new batch of potatoes. Enjoy!
