Roasted potatoes are hearty, cold weather comfort food but they can take a long time to prepare. If you've made a batch of bakers and have some leftover, freeze them for later use.       Allow roasted potatoes to cool. Freezing them before they've cooled will result in the formation of ice crystals, which will affect the consistency and flavor.

      Place potatoes in a single layer on a baking sheet, spaced so that they are not touching.

      Place the baking sheet in the freezer. It will remain in the freezer until the potato pieces are frozen firm.

      Remove the baking pan from freezer and place the potatoes in a plastic freezer bag or plastic storage container. Return them to the freezer.

Tips & Warnings

  • Potatoes may become grainy when frozen. If you don't like this texture, potatoes can still be used in other ways; dice and toss them into egg scrambles, stir them into soup or serve them mashed and mixed with your favorite seasonings.
