How to Make Italian Meringue
Italian meringue is a light, fluffy and delicate dessert that often accompanies a heavier food, such as ice cream or cake. Although you can buy it from a bakery or grocery store, you can also try your hand at making your own using a few basic ingredients. Things You'll Need
- Pot
- 6 eggs
- Bowl
- 1 1/4 cup sugar
- 3/4 cup water
- Candy thermometer
- Electric mixer
- Waxed paper

Pour 1/2 cup of water and 1/2 cup of sugar into the pot.

Heat the mixture over medium-high heat for about 20 minutes, until the sugar cooks down to a taffy-like consistency.

Add 3/4 cup more sugar and 1/4 cup more water.

Insert a candy thermometer into the mixture.

Cook the mixture for about 10 minutes, until the temperature reaches 250 degrees Fahrenheit.

Separate the eggs, keeping the whites in a bowl.

Beat the egg whites with the mixer until they form soft peaks.

Pour the egg whites into the sugar mixture, and beat the mixture until it cools completely.

Spoon or pipe the mixture onto waxed paper.
