Cakes are always a popular treat, and are very simple to make. But cakes can sometimes turn out dry, when what you want is a cake that is light, airy and moist. There are a number of ways to make sure your cake will turn out moist, such as using cake flour. Cake flour is a specialized kind of wheat flour formulated for making cakes. It is made from the softest portion of the wheat kernel, and is a flour that is high in protein and able to absorb butter and fats easily. Does this Spark an idea?

      Add 1 cup of white superfine sugar to 1 cup of butter and beat with a wooden spoon until the mixture is smooth.

      Add three eggs, one at a time and beat into the mixture. Add your flavoring, such as vanilla, strawberry or lemon.

      Add 1 cup of cake flour, gradually beating into the mixture until smooth. If you don't have any cake flour, you can improvise by sifting 1 cup of general purpose flour into a bowl with a sieve and then mixing in 2 tablespoons of cornstarch.

      Pour your cake mixture into two greased baking tins lined with greaseproof paper, and bake for 30 to 35 minutes at 325 degrees Fahrenheit, or for 20 minutes at 375 degrees Fahrenheit.

      Remove your cake from the oven, leave to cool and remove from baking tins. Your cake should be light, airy and moist.
