How to Make Spicy Jalapeno Muffins
Spicy jalapeno muffins are a hot and sweet twist on the classic corn-bread muffin. They are simple and quick to make, and serve as a great accompaniment for chili, soups, salads and main dishes. These are also perfect when served with a Mexican-style breakfast. Simple ingredients make baking this recipe a snap. You can alter the amount of peppers and cayenne used to suit your taste buds. - 2 packages corn-bread mix
- 3 eggs
- 1/3 cup milk
- 1/3 cup sugar
- 2 tbsp. diced jalapeno peppers in vinegar
- 1/2 tsp. ground cayenne pepper

Preheat the oven to 400 degrees. Grease a large cast-iron skillet or 9-by-9-inch baking pan.

Place the corn-muffin mix in a large mixing bowl. Add the sugar to the mixture and stir well. Use the spoon to make a well in the center of the mix.

Add the milk and eggs into the well. Stir the wet ingredients in the well a bit to break up the egg yolks, and then mix the batter just until smooth. Do not overmix.

Add the jalapeno peppers and cayenne to the mixture and stir well to distribute throughout. Transfer the batter evenly to the greased pan.

Bake for 15 to 20 minutes, or until golden brown. The top should spring back at the touch. Allow to cool for five to 10 minutes prior to serving.
