How to Put Canned Fruit Into JELL-O

Jell-O has long been enjoyed as a sweet, light dessert. It's quick and easy to prepare, readily available in a multitude of fruity flavors and inexpensive. This gelatin pairs well with canned fruit for creating tasty treats sure to please almost anyone. Spoon fruited Jell-O into fancy serving dishes to present as an after dinner dessert. Nearly all kids love Jell-O, so put some canned fruit into it and magically transform gelatin into a yummy new dessert. You can even indulge yourself if you're watching your weight.   • 1 15-oz. can of fruit
  • 1 3-oz. package of Jell-O
  • ¼ cup chopped coconut (optional)
  • ¼ cup chopped pecans (optional)

      Choose canned fruit such as peaches, pears, cherries, apricots, grapes or combinations of them such as cocktails. Avoid those that contain lots of pineapple, mangoes, citrus, kiwi, guava, figs or papaya. These fruits will prevent the Jell-O from properly setting.

      Empty the canned fruit into a colander to allow it to drain very well. Reserve the liquid.

      Stir 1 cup of boiling water into the Jell-O and stir constantly until dissolved, about two minutes. Stir in 2 cups of very cold water. Substitute part or all of the liquid from the canned fruit for part of the cold water, if you wish. Blend well.

      Refrigerate the Jell-O until it begins to set and the consistency resembles that of cold egg whites. This will take about 30 to 45 minutes.

      Fold the drained canned fruit into the Jell-O carefully and mix well.

      Fold in 1/4 cup of chopped coconut and ¼ cup chopped pecans, if desired. Mix well. This will appeal to many children and add valuable fiber to the dessert.

      Refrigerate the Jell-O for another hour, or until well set.
