How to Make Light Buckeye Bars
Buckeye balls or bars are a Ohio traditional candy. The two main ingredients are chocolate and peanut butter. The candy can be shaped to resemble buckeyes or prepared as bars and cut like brownies. Either way you will have the same melt-in-your-mouth flavor. Many buckeye candy recipes can be found throughout Ohio and elsewhere. The recipe below is for light buckeye bars. Things You'll Need
- 1 stick light butter, softened
- 3/4 cup light creamy peanut butter
- Mixer
- 3/4 cup light vanilla wafers, crushed (22 wafers)
- 1 3/4 cups powdered sugar
- 4 oz. whipped topping, frozen
- 3 squares semi-sweet chocolate
- 8-square inch pan
- Aluminum foil

Line an 8-inch square pan with foil. The ends should extend over the sides of the pan.

Beat the butter and peanut butter in a mixer on medium speed until they are well-blended.

Add the wafer crumbs into the mixture and gradually add the sugar. Mix it well.

Press the mixture into the prepared pan.

Microwave the frozen whipped topping and chocolate for 1 minute. Stir and microwave it 15 to 30 seconds longer or until the chocolate is melted. Stir it, then spread it over peanut butter mixture.

Refrigerate the bars for 2 hours, then lift the bars the from pan using the foil. Cut the bars into your desired size.
