How to Substitute Granulated Sugar With Honey
Substituting honey for granulated sugar is extremely simple in some cases. When making tea, for example, you can simply stir in honey to taste rather than your usual amount of sugar. Replacing granulated sugar with honey in baking, however, is more involved. Simply substituting measure-for-measure would leave you with a final product that is overly moist and might not bake properly. It also would be extremely sweet. With some adjustments, however, you can successfully substitute honey for granulated sugar. Does this Spark an idea?

Substitute 3/4 cup of honey plus an extra tablespoon for every 1 cup of sugar in your recipe. For example, if you wish to substitute honey for 2 cups of sugar in a recipe, you need a total of 1.5 cups plus 2 tbsp.

Measure out an amount of honey equal to the amount you calculated. In our example, you would measure out 1.5 cups of honey.

Add ¼ tsp. baking soda to the recipe for every cup of sugar you are replacing with honey. Reduce the liquids in the recipe by ¼ cup for every cup of sugar you are replacing with honey.

Add the honey to the recipe in the same way and at the same time as you would have added the sugar.

Bake the item you are cooking at a temperature 25 degrees lower than the recipe suggests. This will help the item cook more evenly despite the addition of the honey.

Tips & Warnings
You do not need to add baking soda if the recipe includes buttermilk or sour cream.
