Creaming butter and brown sugar does not actually involve any cream. Instead, this term refers to beating butter and sugar together until they reach a light, fluffy, airy consistency. This process incorporates air bubbles into the mixture, which you then add to the rest of the recipe. This gives the final product a significantly lighter and airier texture than it would have had otherwise.       Remove the butter from the refrigerator and allow it to warm to room temperature.

      Put the paddle attachment on your stand mixer. If you are using a hand-held mixer, use the beaters.

      Cut the butter into cubes, and place them into a mixing bowl. Add the brown sugar.

      Beat the butter and sugar at low speed for one to two minutes. Turn the speed up to medium, and continue beating the sugar and butter together.

      Scrape down the sides of the mixing bowl every minute or so with a spatula. This will ensure that the beater beats all of the mixture rather than missing some that is stuck to the sides of the bowl. Continue beating the mixture for four to six minutes. At the end of this process, the mixture should be fluffy yet thick and somewhat sticky.
