Sushi is the consumption of raw fish in a Japanese style of preparation. It is made with rice and is considered artwork. Its appearance is just as important -- if not more so -- as the taste of the dish. When you are hiring a sushi chef it is important that he or she understands how to properly prepare sushi and has the culinary art skills to make it look great. The process of hiring a sushi chef is like an audition because of the special qualifications needed.

      Visit local sushi chef classes or culinary arts schools. You might be able to locate chefs who are taking courses to learn the art of sushi making. You might have the opportunity to see their work before requesting a formal interview.

      Post an ad in your local newspaper or online job board. Online job boards include Ihire, Careerbuilder and Monster. This will generate some leads and interest in the sushi chef opportunity.

      Interview candidates who meet your basic requirements. Your basic requirements might include graduation from a culinary school with additional courses in the art of sushi or experience working in a sushi restaurant.

      Select a few people from this candidate pool to prepare some items for you to view and sample. Require each candidate to individually prepare different sushi dishes. You can determine which dish you like the best based on taste and appearance.
