Add 1/4 teaspoon of peppermint flavoring and a few drops of the food coloring of your choice. Red and green food coloring are popular choices. A few drops of red food coloring will make the mints a pretty pink color; a few drops of green food coloring will give the mints a lovely pastel mint color. Mix the flavoring, food coloring and cream cheese together well; add 2 1/2 cups of powdered sugar and mix until smooth.

Shape the mixture into marble-sized balls. Dip one side of each ball in a small amount of granulated sugar. Press each ball into a mold, sugar-side down. Remove the mints from the molds immediately and transfer them onto a piece of wax paper. Once the mints are firm, transfer them onto a cake rack and let them dry for three to four hours. If you store them in an air-tight container they will keep for up to two weeks.
