How to Measure Egg Whites
Some recipes call for egg whites, rather than the entire egg. When the recipe you're using calls for three egg whites, the amount of egg that ends up in the recipe can vary depending upon the size of the egg. The white of a small egg will not be the same amount as the white of a large or extra-large egg. Knowing how to measure egg whites can make all the difference in how your recipe turns out. Crack the eggs, one at a time. Place an egg separator over a bowl and pour the egg through the separator. The separator will hold onto the egg yolk while the white drips through to the bowl.

Check your recipe to see how many egg whites are called for.

Use measuring spoons to measure egg whites. Measure 2 tbsp. of the egg white liquid for each egg white your recipe calls for. A half-cup of egg white is equivalent to four to five egg whites.

Tips & Warnings
When substitute egg white for whole eggs, use 3 tbsp. egg white for one whole egg.
Egg whites can be stored in the freezer. Store large quantities in a container and freeze small amounts in an ice cube tray, then move them to a container or freezer bag.
One medium egg typically contains two tablespoons of egg white.
