Turkish Coffee Instructions
Coffee is a wonderful way to start the day and can also be the perfect meal closer when paired with dessert. Turkish coffee is a deep, rich coffee that is made in a kettle-like pot called an ibrik. Ibriks can be purchased in kitchen appliance stores or online and have a unique shape that is perfect for brewing the coffee. Knowing how much of each ingredient to add and in what order to add them is vital for a quality finished product. Does this Spark an idea?

Add 2 tsp. of sugar to the ibrik if it is the average 8 ounce size. For a bigger or smaller ibrik, adjust the amount of sugar according to taste.

Fill the ibrik with water up to the line just beneath where the neck of the pot starts. Set the pot on the stove.

Add 3 heaping tsp. of Turkish coffee grinds into the pot but do not stir. Simply allow the coffee, which will be ground very fine, to float on the top. The coffee will create a barrier that separates the air from the water, allowing it to brew gradually and smoothly.

Turn the heat on the stove to high and wait until the coffee starts to foam. When the foam fills the neck of the ibrik, pull it off the stove and stir the coffee until the foam mixes in and subsides.

Replace the ibrik back to the stove and wait until it foams again. This time the coffee should start foaming almost immediately. Wait for the foam to fill the neck again.

Remove the pot again and stir the coffee well. Return the pot to the stove one final time. Wait for the foam to fill the neck. Remove it for the final time. Do not stir the coffee this time.

Pour the coffee into individual mugs to serve.

Tips & Warnings
If your ibrik only holds 4 ounces, use 2 heaping tsp. of Turkish coffee. If your ibrik holds 12 ounces, use 6 heaping tsp.
Do not walk away from the coffee once the heat is on. Once the foaming begins, things move very quickly.
