Homemade ravioli may be a delicious dish, but it can be a time-consuming task for even the most seasoned pasta makers if done by hand. Ravioli maker plate kits allow even novice cooks to create impressively uniform ravioli pockets in very little time. There are a number of different brands of ravioli maker plates, but other than the shape of your finished ravioli they are basically all the same. Things You'll Need

  • 1 batch of fresh pasta dough
  • Pasta roller
  • Ravioli filling
  • Spoon
  • Pastry brush
  • Rolling pin

Instructions

    • 1

      Cut out pieces of dough about the size of a tennis ball and roll them through a pasta roller until the strips are as thick as a nickel.

      Lay one strip of pasta over the bottom plate of the ravioli maker. Make sure that the edges of the dough cover all of the cutting edges and extend past them at least 1/2 inch.

      Push the forming plate gently down over the pasta. This will stretch the pasta slightly, making pockets in the dough and pushing it into the depressions in the ravioli maker.

      Brush water on the dough over all of the areas around the pockets. If you don't have a pastry brush, you can use your fingers.

      Fill each pocket with a small amount of filling. Put only enough filling into each pocket to reach the top of the pocket without heaping up over the edge.

      Lay a second sheet of pasta over the first sheet and filling, making sure that all the edges are covered.

      Roll the pasta over the ravioli maker with a rolling pin. Begin rolling gently at the center of the ravioli maker and work toward the edges. Keep pushing harder and harder until the jagged cutting edges show through the pasta dough, separating each individual ravioli.

    The hard part is trying to get the squares of ravioli out of the plate...how do you do it? Mine stuck to the metal and I had to scrape them off...what a mess! Should you oil the metal beforehand?
