Garlic can be a great vegetable to cook with. It's fragrant, tasty and healthy for you. For an extra special garlic dish, consider using elephant garlic instead of standard garlic. Elephant garlic is actually more like a leek. The bulbs are quite large, and the flavor is more mild and sweeter than the flavor of standard garlic. Before you can start cooking with elephant garlic, you of course need to choose a bulb from the grocery store or market. Does this Spark an idea?

      Squeeze the elephant garlic bulbs. They should be hard. A soft bulb indicated a rotting or unhealthy vegetable.

      Check out the surrounding papery covering. There should be enough covering that you cannot see the actual pieces of the elephant garlic bulb inside. But it should also be wrapped tightly around the elephant garlic bulb.

      Look for large pieces. Elephant garlic, as the name implies, is large. If the bulbs are small, the elephant garlic may not be ready to eat yet.
