How to Cook an Inexpensive Vegetarian Thanksgiving Dinner

- Vegetarian turkey substitute (tofu, seitan, lentil loaf)
- Potatoes
- Sweet potatoes
- Flour
- Butter or oil
- Green beans (or other vegetables)
- Canned or processed pumpkin for pie

Prepare and cook an inexpensive main dish--use baked tofu, pan glazed seitan, or lentil loaf instead of commercial vegetarian turkey alternatives.

Mash peeled and boiled potatoes with olive oil or canola oil instead of butter. Use one tablespoon of oil for each large potato. Season with salt and pepper.

Make your own vegetarian gravy from scratch. Make a roux with flour and butter, oil, or margarine. Add in vegetable stock or water and soy sauce. Season with chopped onions, garlic, or mushrooms.
