Grilling adds a special flavor to cooked meats, but smoking takes barbecue to an entirely new level. While smoking takes more time than regular barbecue, the results are well worth the wait. The Brinkmann smoker is a user-friendly smoker that allows you to smoke food on two layers of grills, effectively doubling the amount of cooking space available.   • Charcoal lighter fluid

Instructions

      Remove the smoker body from the base and set it on the ground. Remove the lid from the smoker body.

      Place 10 to 15 pounds of charcoal in the charcoal pan. Soak the charcoal with charcoal lighter fluid and allow it to sit for about three minutes. Light the charcoal and let it burn until the coals are covered with a light gray ash. This should take about 20 minutes.

      Place pieces of wood chips or chunks, such as mesquite, hickory, oak and cherry, directly on the coals after they have burned down with a pair of long tongs. Add four to six chunks of wood for the correct amount of smoke.

      Insert the water pan into the three slots that are designed to hold it. Move the smoker body onto the charcoal pan base. Pour water into the water pan until the surface of the water is 1 inch below the top of the pan. Take care not to spill water onto the coals.

      Place the lower food grate into the smoker. Arrange food pieces in a single layer all over the food grate, allowing space between each piece of food and between the food and the smoker walls.

      Place the upper food grate onto the holding brackets near the top of the smoker. Arrange more food in a single layer on this grate.

      Replace the lid on the smoker and allow your meat to cook until done. The cooking time will vary depending on your cut of meat and the size.
