Test the glass to make sure it is clean. For bartenders, this is an essential step. Leftover residue from previous customers and previous drinks can taint the new beer. To test the glass, wet the inside with cold water, then shake salt around the inside. If the salt sticks, the glass is clean. Rinse the glass to remove the salt, and clean if necessary.

Hold the clean glass under the beer tap at a 45-degree angle. Place your hand low on the tap to minimize the distance your hand must travel to operate it. This will improve the quality of the pour. Open the tap in one fluid, snapping motion and let the beer flow freely. The beer should hit the middle of the glass and flow downwards.

Straighten the glass as it fills. Watch for the foam as it develops. The foam helps develop flavor and aroma. Aim for half an inch of foam if using a standard pint glass. Don't let the faucet touch the beer in the glass as it fills. Close the tap by snapping it back in one motion.
