How to Make Sweet Potato Waffles
Sweet potato waffles are simple to make and include nutritious ingredients. Serve them drizzled with maple syrup, pats of golden butter or even toasted pecans for a great meal. Does this Spark an idea?
Things You'll Need
- Waffle iron
- 2 1/2 cups unbleached wheat flour
- 3 tsp. baking powder
- 1/2 tsp. sea salt
- 1/2 tsp. cinnamon
- 3 eggs
- 2 tbsp. honey
- 6 tbsp. butter
- 1 cup milk
- 1 cup sweet potatoes
- Pastry brush
- 2 mixing bowls
- Mixing spoon
- Whisk
- Ladle

Peel and chop a sweet potato before steaming, for easy mashing. Peel and cut your sweet potato into 1-inch chunks. Place them in a steamer tray and steam until fork tender. Cool until they reach room temperature.

Plug in the waffle iron before mixing the batter. Turn on the waffle iron to heat it up. Brush both sides of the iron with butter using a pastry brush.

Keep dry and wet ingredients separate at first. Whisk the flour, baking powder, salt and cinnamon in a large mixing bowl and set aside.

Use fresh organic eggs if possible. Beat the eggs slightly and add the honey, butter, milk and sweet potatoes. Stir vigorously until they are well combined, making sure the sweet potatoes are fully incorporated into the mix.

A child can help stir the batter. Pour the wet mixture into the dry bowl and combine, stirring only long enough to wet the dry ingredients.

A full one-cup ladle is the standard amount for family-sized waffles. Ladle the mixture into your waffle iron---using the appropriate amount for your size iron---to fill the grids without overflowing. Close the lid and cook about 4 minutes or until the amount of steam reduces to a thin stream and the waffle smells fragrant. Check by lifting the lid to see if the waffle is golden brown.

Fresh waffles are best served hot off the iron. Lift the lid and remove the hot waffle. Serve with butter, maple syrup, toasted pecans or eat them plain.

Tips & Warnings
Try using baked sweet potatoes in place of uncooked potatoes for this recipe.
