How to Clean an Institutional Deep-Fat Fryer
Deep-fat fryers create the greasy, crunchy outside on foods such as chicken, onion rings and french fries. While cleaning an institutional deep-fat fryer isn't difficult, it should be cleaned thoroughly after each use using the proper techniques and supplies. Does this Spark an idea?

Turn the deep fat fryer off and allow the fat to reach 150 degrees Fahrenheit before draining it completely.

Remove the basket-shaped support screen from the fryer. Use a spatula to scrape away any solidified, oxidized fat from the screen.

Fill the kettle to the line with hot water. Add 3 tbsp. dishwasher detergent.

Turning the heating element on and allow the soapy water to reach a boil and continue boiling for 10 minutes. Turn off the heat.

Drain the soapy water. Fill a bucket with 1 part white vinegar to 2 parts water and use it to rinse the inside of the kettle.
