Mung bean sprouts, on the right, are one of the largest types.

Mung bean sprouts are common in Asian cuisine and often can be found in stir-fry vegetable dishes or as a raw accompaniment to dishes. They are available at Asian supermarkets and at some large chain stores, but you also can grow your own mung bean sprouts at home from dried mung beans. Regardless of how you obtain the mung bean sprouts, they should be stored in a cool, dry environment for best results. Does this Spark an idea?

Instructions

  1. Store in Refrigerator

      Allow the mung bean sprouts to air dry. If you are sprouting them at home, wait at least eight hours after you last rinsed them or up to 24 hours if they are still wet after eight hours. Sprouts purchased in a store already should be dry, but if they are not, spread them out on a towel for a few hours.

      Place the sprouts in a plastic bag.

      Put the bag of mung bean sprouts in your refrigerator and eat them within three to five days.

    Store in Freezer

      Wash the mung bean sprouts.

      Boil a pot of water. You will need enough water to completely submerge all of your sprouts.

      Drop the mung bean sprouts into the boiling water and cook for about three minutes to blanch them.

      Prepare a bowl of ice water while the sprouts are cooking.

      Pour the hot water and mung bean sprouts through a colander, and then dump the sprouts into the ice water bath for a few minutes to stop them from cooking further.

      Pour the sprouts and water through the colander again, and try to drain as much water as you can.

      Put the mung bean sprouts in a freezer bag or freezer-safe, airtight container and freeze them. For best quality, eat the sprouts within 10 to 12 months.

  • Wash refrigerated mung bean sprouts before eating them because you did not wash them before putting them in the refrigerator.
