How to Make Gelato With a Commercial Machine
Gelato is a rich, decadent dessert that is very similar to ice cream except it is creamier and a bit more heavy. Making homemade gelato is much easier than you'd think, especially when you use a commercial machine like an ice cream maker to do it. These commercial machines can be found in home appliance stores and online and can help you create delicious gelato in any flavor that you'd like. Does this Spark an idea?
Things You'll Need
- Milk
- Sugar
- Powdered milk
- Large pot
- Egg yolks (8)
- Whisk
- Half and half
- Vanilla extract
- Wooden spatula
- Frozen or fresh fruits
- Blender
- Ice cream maker

Pour 2 cups of milk, 1 cup of sugar and 1/4 cup of powdered milk into a large pot over medium heat. Allow the mixture to simmer and the sugar to dissolve. Turn the temperature down to low.

Add 1 cup of the hot, sugary milk mixture to a bowl that contains 8 thoroughly whisked egg yolks, continuing to whisk as you pour.

Add the egg yolk mixture to the pot and stir well. Return the heat to medium and stir constantly with a wooden spatula. When the mixture is thick and gravy-like, remove from the heat and add 1 cup of half and half and 1 teaspoon of vanilla extract. Stir well, allow to cool and refrigerate overnight.

Place 3 cups of fruit into a blender and puree. You can choose any fruit flavor that you'd like, or even mix more than one to create a more customized flavor. Strawberries, raspberries, peaches and mangos all make great gelato flavors. You can also choose to leave the fruit out and make simple vanilla gelato.

Mix the pureed fruit with the refrigerated cream and sugar mixture and pour it into a commercial ice cream maker that has been loaded with ice, according to the directions for the specific ice cream machine.

Turn the ice cream maker on and wait for about 25 minutes, or until the motor has stopped turning because of how cold the gelato is.

Turn the machine off and open the top to remove the gelato.
