Certain types of cheese contain ambient molds and natural, safe bacteria. These two ingredients are part of what helps cheese to reach its final stage. Even though it contains safe molds, the unsafe kind of mold can form on cheese, making it unhealthy and unsafe to eat. When properly stored, cheese will keep for a long time.       Mix 1 tbsp. baking soda with 1 quart warm water in a bucket. Use this natural cleansing solution and clean cloths to clean and dry your refrigerator, including the cheese and meat drawer, if you have one. A dirty refrigerator is more likely to develop mold, which can transfer to your cheese.

      Place newly purchased cheese in the refrigerator so it lasts longer. Left out for too long, cheese can get soft and moldy, making it unsafe to eat.

      Store opened packages of cheese in an airtight plastic container with a lid. Make sure the container is clean and sealed tightly between uses to keep your cheese from being exposed to mold-causing conditions.

Tips & Warnings

  • Mold can be trimmed off hard cheeses, such as American, Cheddar and Swiss. Trim at least one inch away from the moldy part of the cheese, making sure the knife doesn't come in contact with the mold. Mold on cheese does not appear only as blue, fuzzy mold; it can also appear as a thin, white crust on the outside of the cheese.

  • Softer cheeses, such as Brie, cream cheese and mozzarella, should be thrown away when mold appears on the surface or in the cheese.
