Almond butter contains natural oils that can become rancid, so it's best to refrigerate it. This holds true whether the almond butter is raw or roasted, commercial, organic or homemade. If refrigeration isn't available however, you do have some options.

Keeping Almond Butter

If the almond butter has oil separation, stir it with a butter knife before you refrigerate it. It's easier to stir almond butter at room temperature. Homemade raw almond butter will keep in the refrigerator for about two weeks, and store-bought may keep for months. A cooler with block ice or reusable freezer packs can also substitute for refrigeration. To store almond butter without a fridge or cooler, choose a cool, dry, dark place. Because heat rises, a lower shelf in a closet or cabinet away from heat sources is a good place.

Freshness Issues

Sniff unrefrigerated almond butter before each use. Rancid almonds have a sour, "off" odor. Dispose of any almond butter that smells or tastes bitter. For the freshest almond butter, grind almonds for small batches. Toasted almonds keep for one to two weeks in the refrigerator in an airtight container or in the freezer for one to three months.
